This is a surprising and rare aged baozhong oolong that was dry stored in a closed container in Pinglin, Taiwan and without any "wet" notes. It matured peacefully and developed pleasant, clean aging notes. It's quite hard to find aged oolongs in Taiwan that haven't been re-fired over time! The farmer does not remember which variety was used or the exact year, but we estimate that it is 25-30 years old based on the delicious acidic aroma of the dry leaves that points to the slow transformation of tannins and polyphenols, which is often used as an indicator of age. Fortunately, this acidity is only found in the dried leaves, since the macerated infusion is bright and clear with sweet, floral and noble wood notes, but with a very fresh aftertaste.
You'll also find very surprising, fruity aromatic notes you'd never find in a fresh baozhong, evoking Fuji apples and red cherries.
