This is a very interesting, unorthodox and experimental tea that is best classified as a White Oolong. This tea comes from the famous Ali Shan Mountain and was initially processed as white tea with a very long withering phase of about 48 hours. After which is was processed as traditional oolong with shaking, oxidation, heating, rolling, drying, shaping and roasting. The result is a very novel tea that surprises us having achieved an interesting mid-point between the two tea genres while tipping more towards the oolong side due to the rolling and baking. And yet, this tea teaches us the importance of the withering phase is it undeniably leaves its own trace on the finished tea.
