Excellent aged Iron Godess oolong tea from Shimen, Taiwan, made by tea master Kuo Kuen Rung who is a 2nd generation tea farmer with over 50 years of experience. In his gardens he practices natural growing methods and is currently the director of Nantou county Ai Zen tea association. Mr. Kuo made this tea with his father in the traditional manner: harvest, sun wilting, shade wilting, bruising (shaqing), bamboo sieve shaping, wood firing with traditional longyan charcoal, charcoal fixation 1 done at 100º for 10-15 minutes and then allowed to rest and cool. The next day the leaves were bundle wrapped for shaping and then fixed a second time at 75-85º for 1-2 hours. Finally, he stored the finished tea in a plastic bag wrapped in cloth. It may not sound very romantic, but according to Mr. Kuo it is the best way to age this tea.
